This simple no bake recipe will knock your socks off! I made these while watching the snowfall this afternoon. They are simple and have wholesome ingredients.
1 1/2 cup coconut oil
1/4 cup raw honey (locally sourced from our hives!)
3 drops of Doterra Peppermint essential oil
1 cup dark or semi sweet chocolate
chocolate sprinkles or crushed candy cane for decoration (optional)
In a mixing bowl combine honey, coconut oil and peppermint. Mix until no lumps of coconut can be seen. Refrigerate until the mixture is solid then scoop with a tablespoon or ice cream scoop. Place your scooped ingredients on a cookie sheet and refrigerate those while melting your chocolate on a double boiler. Make sure your chocolate is fully melted but cool to the touch before dipping your mints otherwise your patties will begin to melt in the chocolate!
I went ahead and filmed myself making these on Facebook live and almost instantly regretted it as my chocolate was to hot and my little patties started to vanish into the chocolate. I went ahead and ended my video early before being able to show my finished product as the video had already gotten quite long. I would recommend adding in some powdered sugar to help keep your mint portion a little more solid but this is not necesary if you are patient unlike me. I didn’t want to have the added sugar in them but I caved half way through the making as it was frustrating watching them melt like the last snow man at the beginning of spring into the bowl of chocolate.
If you are patient and not on a Facebook live video I am sure you can make it work by completely cooling your ingredients before dipping the mints into the chocolate using a fork or slotted spoon. I was also rushing as the snow was getting deeper outside and I wanted to be able to plow the driveway before it got to dark. Somehow I made it all work.
They didn’t turn out picture perfect but they are still rather tasty!
